Healthiest Bean Dip I've Found

Bean Dip (recently sampled at the Wyatt Riot with raving reviews):

1 can whole kernal corn
1 can black beans
1 can black eyed peas
1 can kidney beans
(all of these are drained)

1 red pepper diced small
1 yellow pepper diced small
1 orange pepper diced small
1-2 green peppers diced small
1 small onion diced
6 roma tomatoes diced
2-3 avacados diced (or 7-8 avacados for Paige style dip:)
Pour light catalina salad dressing over to desired sweetness, and put in a big bowl!

  1. Kate, I've been meaning on sharing Nathan's favorite dinner with you and when I saw this site, I really wanted to because it's super healthy.

    I cook whole wheat noodles (my favorite are chunky noodles like bow tie or penne or spiral). When the noodles are done, you drain them, of course.

    Then I split the noodles up into bowls (how ever many people are eating) and cut a fresh tomato right on top of each bowl. It's best if you let all the juice from the tomato drop into the bowl because it becomes the sauce for the dish. Then I just add salt, pepper, garlic salt, and a splash of oregano.

    Stir it all up and PRESTO. Majorly healthy, SUPER simple, and deliciously yummy meal. Try it out and share it if you like it.
